These crumbly, sweet and juicy blueberry crumble bars can be made any time of year using frozen berries!
In this recipe, the buttered almond base combines well with a layer of juicy, sweet Sujon blueberries and the extra crumble and almonds on top give it a nice crunch. It’s quite impressive and quite simple to make, which is always a bonus!
Frozen berries are a staple in my house. They are so versatile: I add them to yogurt, porridge, smoothies and also use them in baking. I used Sujon blueberries for this recipe. Their blueberries come from British Columbia in Canada and are large, juicy and sweet.
Blueberries get their beautiful dark blue color from a group of compounds called anthocyanins. These plant compounds are also antioxidants and are believed to protect the body from damage caused by free radicals. Blueberries also provide fiber and vitamin C.
These bars are delicious served on their own. They’re also delicious warmed with yogurt or ice cream and served with extra berries for a special dessert.

Blueberry Crumble Bars
Ingredients
For the base and the crumble

butter or margarine -

almond butter -

ground almond -

white flour -

wholemeal flour -

coconut or brown sugar
Berry layer

Sujon blueberries -

tablespoons
flour - Juice of ½ lemon

chia seeds -

cup
sugar
Icing sugar and sliced almonds for garnish
Instructions

Preheat the oven to 180 degrees Celsius

Cut the butter into small cubes. Add to food processor or blender with almond butter and dry ingredients. Pulse until mixture comes together.

Line a slice mold with parchment paper. Press? of the mixture into the mold firmly. Bake for 10 minutes, then set aside.

While the slice is in the oven, heat the blueberries, chia seeds, flour and sugar together in a small saucepan, stirring regularly until the berries are thawed.

Pour the berries over the base and crumble the remaining base mixture on top.

Bake for 20-25 minutes, until just golden brown.

Let cool completely in the pan, then cut into slices. Sprinkle with icing sugar and sprinkle with chopped almonds.

Store the bars in an airtight container in the refrigerator.
