Try this quick and easy chicken satay with spicy pickled cucumber and rice!
Ingredients (serves 4, adjust accordingly):
- 2 sachets of 250 g long grain brown rice (cooked)
- 500 g chicken breast (diced)
- 1 cucumber
- 50 g peanut butter (smooth)
- 50 g sweet chili sauce
- 50 g block of coconut cream
- 30 ml of rice vinegar
- 30 ml soy sauce
- 1 teaspoon chili flakes
- 1 teaspoon of sugar
Preparation time: 5 minutes
Cooking time: 15 minutes
Method:
- Bring half a kettle to a boil, heat a large frying pan with a drizzle of vegetable oil over medium-high heat, dice your chicken breast and add it to the pan when hot, cook for 10 to 12 minutes.
- Slice the cucumber very thinly and add it to a bowl with your rice vinegar, sugar and chili flakes, mix everything together and leave to marinate for a few minutes.
- Chop your block of coconut cream, and dissolve it in 200ml boiling water, once completely dissolved, add the peanut butter, soy sauce and your sweet chili sauce, mix to leave a peanut sauce.
- Heat your rice packets together.
- Add your peanut sauce to the pan with the chicken, mix and cook for another 2-3 minutes until the sauce thickens.
- Prepare your chicken satay, with the marinated cucumber and rice, and add soy sauce or sriracha to the rice if you wish!
