What is the difference between cocoa and cocoa, you ask?
RAW cocoa is made by cold pressing, not roasted cocoa beans, while cocoa the powder is obtained by roasting the beans at high temperatures. Cold pressing anything, whether it’s food or even products to apply to your skin, is much better than high heat. This is because it retains many more key nutrients. However, some foods have a higher nutritional bioavailability once cooked, such as tomatoes – so I would never advocate a 100% raw diet!
